Make your own Gnocchi

  • 700g       Potato
  • 250g       Flour
  • 80g         Butter melted
  • Chopped Thyme
  • Pinch nutmeg
  • salt and pepper

Roast potatoes for 1-2 hours until soft.

Peel while warm and place through a mouli doing only a couple at a time.

Place flour in a bowl and make a well.

Fold in potato, butter and thyme. Season to taste.

Knead until it comes together in a ball.

Take a 1/4 of dough and roll into a long cigar shape on a well floured bench. Cut into even pieces.

Place into boiling water until it floats to the top. Remove.

When ready to serve drop into boiling water again.
